@{renshisan} I am trying to contain my enthusiasm to your post because it rang ALL of my BELLS! I am from Upstate New York originally and that is precisely where I learned to love AUTHENTIC sauce (shhhhh, I know it is called GRAVY) and all it involves. I am so pleased you have joined our forum and would love to know more about your family sauce, your soil, learned traditions on how to amend it, whether or not you make your own wine…………and I will stop there for now!
